ABOUT THE PRODUCER:
Established in 1871, San Silvestro has produced DOC and DOCG wines from its estate winery in the Commune of Novello, in Piedmont. The traditional varieties are mostly grown in the Langhe and from vineyards found in the Roero and the Monferrato regions. Founded by Giovanni Sartirano, San Silvestro has been passed down through four generations and today, it is run by cousins Paolo and Guido Sartirano. Following the family traditions and ethos, they hold the Equalitas certification for their sustainably cultivated vineyards and produce modern wines which express the traditional varieties of the Piedmont region and its distinctive terroir. Over the years San Silvestro has gradually expanded beyond the local market and their award-winning wines are internationally recognised.
ABOUT THE VINEYARD:
The Cortese grapes are grown on the hills not far from the Ligurian Sea producing this crisp and refreshing DOCG Gavi del Comune di Gavi. The grapes are grown in the Alessandria area, especially on the hillsides surrounding the town of Gavi. The Cortese variety is not particularly robust and therefore requires good climatic conditions in order to ripen properly. In the Alessandria area, it has found the ideal conditions to produce excellent results. Gavi’s climate is continental, with cool winters and warm, dry summers. The Apennines protect the vineyards from harsh weather, while diurnal temperature variation promotes acidity and aromatic complexity in the Cortese grapes. The soils are rich in marls and fossils, in which this variety thrives.
THE WINEMAKING PROCESS:
The grapes were gently pressed before fermentation, which took place in stainless steel tanks at a controlled temperature of 18 to 20°C and lasted 10 days. The wine was left to rest in the tank on its fine lees for six months, which added texture and complexity, before being bottled.
OUR TASTING NOTE:
This crisp white wine shows incredible mineral, zesty citrus and floral notes, with a hint of spice. Prominent mineral characters linger on the deliciously mouthwatering finish.
