ABOUT THE PRODUCER:
Run by Pascal and Marie-Laure together with their son Marius and his cousin Gaël, Domaine Tabordet is a 21-hectare estate, including five hectares in Sancerre and 16 in Pouilly-Fumé. The domain is very much a family business, using the latest winemaking technology. The vineyards are managed with the utmost respect for sustainability and biodiversity and the estate is certified organic and Demeter certified as biodynamic from the 2023 vintage. The resulting wines are a true reflection of the diverse soils which make up their estate, showing characteristic flinty flavours, with good weight and a full body.
THE VINTAGE:
A mild winter was followed by a mild spring, resulting in an early emergence of the vine cycle. The summer was marked by a succession of heat waves, which resulted in healthy, disease-free vines. The 2022 vintage perfectly reflects its origins, showing fresh, mineral and fruity flavours with refreshing acidity, this is full of life with lovely volume on the palate.
ABOUT THE VINEYARD:
The vineyard is situated in the heart of the Pouilly Fumé appellation on the right bank of the Loire River. The vines are trained according to the Guyot Poussard method, which emphasises the bilateral flow of the sap in the vine. The vineyard is carefully cultivated throughout the year with debudding of the vines and tilling of the soil to reduce the need for herbicides; and certain parcels are left with grass cover to limit the vigour of the vines. Green harvesting takes place to limit the yields and concentrate the flavours in the remaining fruit and canopy management such as deleafing takes place at the end of June. The soil in the vineyard is made up of clay-limestone. The harvest takes place between mid-September and mid-October when the grapes have reached optimal maturity. Certified organic.
THE WINEMAKING PROCESS:
The wine was made with as little intervention as possible, in order to express the characteristics of the grapes and the terroir. The grapes were carefully selected and lightly pressed to avoid crushing and vegetal notes. The must was transported by gravity into vats. Fermentation took place with indigenous yeasts in 600-litre barriques. Once fermentation was complete, the wine was aged in the barriques for 10 to 12 months of one to five years, imparting subtle oak characteristics and texture. The wine was gently filtered prior to being bottled.
OUR TASTING NOTES:
A barrel fermented Pouilly Fumé with ripe fruit concentration on the nose and palate showing notes of passion fruit, mango, grapefruit and blood orange. The textured palate is beautifully balanced and has a lovely tangy and mineral freshness on the finish.

Sauvignon Blanc 100%.
