ABOUT THE PRODUCER:
Domaine Jean Goulley was founded in 1986 by Jean Goulley and is now managed by his granddaughter, Maud. In January 2022, Maud took over from her father, Philippe, who had been involved in the estate for nearly 40 years. The family owns 4.5 hectares in the Premier Cru appellations, which are the heart and soul of the Domaine. They own approximately 18 hectares in total. In 1991, the Domaine became one of the very first certified organic producers in Chablis. All of the vineyards are farmed organically, and the wines are produced with restricted use of sulphur. The Goulley family believes the organic farming methods permit an expressive and sustainable soil. Their wines are mineral, pure and lively.
ABOUT THE VINEYARD:
Montmains is a Premier Cru vineyard in Chablis, which stretches along an exposed hillside to the south west of the town of Chablis itself. It is renowned for producing fresh, elegant wines with good minerality. Maud and her family believe in the ethos of organic farming along with that of minimal intervention; all of their vineyards are farmed organically. The Double Guyot trained vines that have an average age of 45 years and are grown in Kimmeridgian soils, which are rich in clay and limestone with fossilised seashells. The vines are planted at a density of 5,700 vines per hectare, and yields are kept to a maximum of 55 hectolitres per hectare. Maud believes in highlighting terroir, and she produces her wines in an unoaked style, allowing them to reveal the purity, minerality and vitality of the soil.
THE WINEMAKING PROCESS:
The grapes were harvested at optimum maturity and were fermented with natural yeasts in temperature-controlled vats using organic principles. The wine spent nine months in stainless steel vats and was made without oak influence to retain the purity of fruit and to let the characteristics of the Premier Cru Montmains terroir shine through. A restricted use of sulphur was used during the vinification, and the wine was lightly filtered before bottling.
OUR TASTING NOTE:
An intense mineral nose followed by fresh, vibrant fruit, crisp acidity and citrus notes. Beautifully balanced, this is pure and round on the palate, with a creamy texture and a long, salivating finish. Classic Chablis.
