ABOUT THE PRODUCER:
Established in 1871, San Silvestro has produced DOC and DOCG wines from its estate winery in the Commune of Novello, in Piedmont. The traditional varieties are mostly grown in the Langhe and from vineyards found in the Roero and the Monferrato regions. Founded by Giovanni Sartirano, San Silvestro and has been passed down through four generations and today, it is run by cousins Paolo and Guido Sartirano. Following the family traditions and ethos, they hold the Equalitas certification for their sustainably cultivated vineyards and produce modern wines which express the traditional varieties of the Piedmont region and its distinctive terroir. Over the years, San Silvestro has gradually expanded beyond the local market, and their award-winning wines are internationally recognised.
ABOUT THE VINEYARD:
The Nascetta grapes are grown in a single-hectare vineyard in Novello, in the Ghercina area, where this variety originated. This perfumed variety is relatively low-yielding, but produces high-quality grapes with concentrated flavours. The grapes for this wine were grown on the banks of a small lake, which provides a unique microclimate in which this variety flourishes. The vines are manually harvested when the grapes have reached optimum maturity levels.
THE WINEMAKING PROCESS:
The grapes were gently pressed to extract the juice and fermented in temperature-controlled stainless steel tanks to preserve the perfumed aromatic qualities of the Nascetta variety. The wine was aged for six months in used French oak, on its fine lees with ‘bâtonnage’ or lees stirring, which gave the wine a fuller texture.
OUR TASTING NOTE:
Deep golden in colour, with aromatic notes of acacia flowers, citrus notes and ripe yellow fruits. Creamy and velvety on the palate with a refreshing and tangy white pepper bite on the finish.
