Amanda, who is of South Asian heritage, studied for her Diploma in Wine at the renowned Le Cordon Bleu School in Paris and had a successful career working in fine wines. Today, she is leading the global shift to integrate quality non-alcoholic wine drinking into the traditional wine industry. NOUGHTY is sold in the world’s coolest bars, restaurants, and hotels in over 40 countries. Recently, at the prestigious Drinks Business Awards, Amanda was presented with the Entrepreneur of the Year Award 2025.
VINEYARD:
The Tempranillo grapes come from the La Mancha region of southern Spain. The climate is continental, typical of the interior of the Iberian Peninsula, which is generally dry, receiving around 300 to 400mm of rain per year and enjoying over 3,000 hours of sunshine annually. The temperatures can fluctuate between average summer maximum temperatures of 26°C, which can reach up to 45°C on the hottest of summer days, dropping to -5°C in the winter. The soils are predominantly sandy and calcareous. The soils are very porous and permeable, which, together with the climatic conditions, produce quality fruit with excellent ripeness levels while retaining the desired level of acidity, which is crucial for producing quality sparkling wines. The grapes are grown organically and are picked when they have reached ideal maturity in August and September.
WINEMAKING:
The grapes underwent brief skin-contact to impart the delicate pale pink colour, before being gently pressed to extract the juice. The must was fermented with carefully selected yeasts in stainless steel vats to retain the purity of the fruit. The wine underwent ageing on the lees to impart delicate complexity before being crossflow and membrane filtered. The wine was gently de-alcoholised via spinning cone technology and vacuum distillation. This method was pioneered in Germany by Carl Jung, a celebrated German psychologist known for crafting exceptional non-alcoholic wines. His ingenious vacuum technique delicately extracts alcohol at low temperatures, allowing the alcohol to be separated while preserving the wine’s distinct aromas and flavours. The wine was then gently carbonated using a system that enabled delicate bubbles to be incorporated into the wine that mimic those found in quality sparkling wines.
TASTING NOTE:
Beautiful classic rosé in colour with a delicious scent of freshly picked wild berries. On the palate, the balance between sweetness and acidity is in perfect harmony.
