ABOUT THE PRODUCER:
Every wine tells a story about the synergy between the soil, sun, grapes and the country of its origin. The Tikveš Winery has been narrating the Republic of North Macedonia’s story as a winemaking country since 1885. However, the Republic of North Macedonia remains one of Europe’s last undiscovered wine countries: it is a natural paradise of vineyards, mountains, lakes and rivers, with a climate perfectly suited to producing quality grapes. Located in the Tikveš region, the Tikveš estate sustainably cultivates indigenous varieties such as Smederevka, Vranec and Kratoshija. The grapes are vinified in the state-of-the-art cellar equipped with the latest technology, resulting in a series of authentic and characterful wines.

ABOUT THE VINEYARD:
The Central Region (Vardar River Valley) of Macedonia, is distinguished by a blend of continental and Mediterranean climates which create perfect conditions for the vines. The vines are average 5-15 years old, double guyot pruned with a density of 4000 vines per ha. The soils are a mix of alluvial and rendzina with an average rainfall of 400450l/m2 and 180-200 days of sunshine.
THE WINEMAKING PROCESS:
The harvest for Temjanika began end of August /beginning of September with manual hand picking in 20kg casks. Grapes are chilled for 24 hours in a cooling room at a temperature of 6-7 °C before cold maceration in inert pneumatic presses for 4-6 hours. Fermentation with selected yeasts at an average temperature of 12-13 °C in stainless steel. Matured in stainless steel tanks of 250 hl for 3 to 6 months.
OUR TASTING NOTES:
Aromatic dry Temjanika with elderflower, acacia, grape, and lime notes. Crisp acidity, light body, and a refreshing citrusy finish.
