ABOUT THE PRODUCER:
Former ‘Winery of the Year’ by James Halliday and Matt Skinner, Larry Cherubino wants his wines to be distinctive and to speak clearly of their variety and vineyard site. He believes in paying meticulous attention to the vineyard, canopy and water management, picking at the right time and minimal intervention in the winery. Larry also makes wine under the Laissez Faire label, an exquisite range of natural wines which are the ultimate expression of site, made in small batches from hand harvested grapes. From delicate whites to opulent reds, all his wines have pure class and finesse.
ABOUT THE VINEYARD:
The vines are grown in various sites across the Great Southern region in Western Australia, which are influenced by the warm easterly winds from the Great Australian Bight. The vines are planted at a density of 1,600 vines per hectare and are all grown on their own rootstocks. The vineyards are situated with a northern orientation, optimising the long sunlight hours, which promotes ripening and maturation of the grapes and are irrigated as required. The soil types vary, with each terroir imparting its own characteristic to the resulting wine.
THE WINEMAKING PROCESS:
Great attention was paid to harvesting dates along with gentle destemming and minimal use of sulphur. Only the free run portion of the juice from selected parcels was used for this wine, to ensure the elegance and purity of flavour was maintained.
OUR TASTING NOTES:
Almost transparent in colour, this wine shows great purity and refinement. A fragrant bouquet, with flavours of lemon peel and bath salts all carried along by a soft texture, a fine acidity and a persistent finish.
