ABOUT THE PRODUCER:
These wines are produced by Italy’s fastest-growing wine company, the superb Gruppo Cevico, based in Italy’s heartland in Emilia Romagna. Il Sacrato translates as ‘Churchyard wines’, which reflects the fact that many ancient European wineries were at one time owned by the Church. This trio of wines has proved to be a huge hit with UK customers since their introduction in 2012, when we were looking for some stylish looking wines which would look good on any restaurant table.
THE VINEYARD:
The vineyards are located in the rich and fertile region of Emilia Romagna, one of Italy’s most prolific wine regions, located between Tuscany to the south and Lombardy and Veneto to the north. The region’s geographical diversity plays a significant part in creating the different terroirs found in the region. The River Po links the rolling hills and the Apennine peaks to the west of the region, flowing through the low lying plains, to the vineyards influenced by the coastal breezes of the Adriatic Sea to the east. Each terroir imparts its own characteristic to the resulting blend. These vines are grown in clay soils.
THE WINEMAKING PROCESS:
Each grape variety was vinified separately. Brief skin-contact maceration took place at controlled temperatures of 10°C. The grapes were gently pressed, followed by fermentation in stainless steel tanks at 18 to 19°C with a selected yeast strain. The wine was left on its fine lees for four months in stainless steel tanks with daily stirring, imparting texture and complexity to the resulting wine. The wine was filtered, blended and left to rest in tank until bottled.
OUR TASTING NOTES:
A fresh, modern blend of Trebbiano and Pinot Bianco. The clean minerality and white floral freshness of the Trebbiano blends beautifully with the citrus freshness of the Pinot Bianco.
GRAPE VARIETY:
Trebbiano 70%, Pinot Bianco 30%.
