ABOUT THE PRODUCER:
The domain covers 40 hectares in the Tavel, Lirac and Cotes du Rhône appellations and the vineyards have been certified organic since 1997 and biodynamic since 2009. Owned by the Leperchois family, who are keen devotees to the biodynamic philosophy, the domain derives its name from its role as a coaching inn and the original cellars were developed in the old stables.
ABOUT THE VINEYARDS:
Domaine des Carabiniers is certified organic and biodynamic by Ecocert and Demeter. The vines are grown in Pliocene sand and are surrounded by heat reflecting pebbles. During the vine’s dormant period, composted grape pomace is ploughed in to improve the soil. Vigorous pruning takes place to select the fruiting canes. Protection of the vines is paramount and the vines are closely monitored on a daily basis, taking into account the weather patterns, in order to reduce the risk of mildew. The vines are green harvested to concentrate the flavours in the remaining berries and the harvest takes place once the grapes have reached the optimum level of maturity.
THE WINEMAKING PROCESS:
The grapes were harvested at night to retain the freshness, protect the aromas, prevent oxidation and avoid the use of sulphur. The cellars then turned into a sparkling clean, bustling scene of activity in which the harvest’s ‘wild’ or natural yeasts were left to develop and spontaneously start the fermentation. The temperature during fermentation was maintained at 28°C for three weeks with regular pump-overs to encourage the maximum development of the fruit aromas. Traditional methods were used throughout to foster the fruit aromas and the outstanding terroir from which the grapes originate.
OUR TASTING NOTES:
A harmonious blend with delicate notes of violets and liquorice enveloped in perfumed red fruits on the textured palate. Lovely ripe Rhône style with beautiful balance and a velvety smooth, long finish.

Grenache Noir 50%, Syrah 25%, Mourvèdre 15%, Cinsault 10%.
